Mahi Mahi en Croûte

Since I'm writing recipes down I thought I could post my favorite. En Croûte simply means "covered with a pastry", so this is a Mahi Mahi covered in a puff pastry shell :) I came up with it after eating a fish en croûte, with a white sauce. I thought "why don't i do the same with my red sauce fish recipe!" So i tried it and i was quite pleased with the result, needless to say it's a fancy dish without really being complicated.

Mahi Mahi en Croûte

Components

2 Mahi Mahi filets

½ onion, finely chopped

1 garlic clove chopped

1 small carrot finely chopped

¼ teaspoon dried oregano

1 tablespoon parsley

2-3 tablespoons spaghetti sauce

Pinch of salt

Puff pastry sheet

1 egg

Method

  1. Heat 1-2 tablespoons of oil in a frying pan. Add the onion, carrots, and a pinch of salt, cook over low heat for 10 minutes or until soft. Add garlic, cook for 1 minute then add the spaghetti sauce, oregano and parsley. Reduce the heat and simmer for 7-9 minutes, stirring occasionally, until reduced and thickened. Season to taste.
  2. Preheat oven at 400 F. Season the fish fillets with salt. Roll out puff pastry sheet so you can cover both fillets and cut in half. Place the fillets in the middle of the sheets, and spoon mixture over the fish. Scramble egg, and brush on the edges of the puff pastry, wrap the pastry over the fish. Brush the remaining egg over the pastry. Bake for 20 minutes or until golden.
  3. Wait for it to cool before eating, at least 10 minutes. The sauce heats up in the oven and might burn you. Eat and enjoy!

Sweet songs & crochet hooks

So this next week is gonna be crazy. I have to write a 4 page essay comparing 'La cabeza' a short novel by Pedro Cabiya and Frankenstein, a proposal for an exhibition on contemporary art with an instructional unit plan to go with it and a Powerpoint presentation to pitch the proposal, also finish my final work for draping (finish the pattern AND make the finished garment) all in one delicious week :D. Good thing I already finished my paper, MLA is a bitch, but you learn to love it lol.

This is my final work for draping. It's a bustier type dress ( i still have to do the pattern for the skirt). I'm making it to use it when i go to see Iron Maiden next April. I'm still not 100% on the fabrics i'm gonna use. I'm thinking a shiny black fabric and a mate black fabric and some snake skin pattern ?? lol

Aaaaand this is another pattern I made in class, which I'll probably use to make a vintage-y polkadot dress :D yea

Anyways, I'm listening to some sweet songs I got from a friend. Dream Theater, Mudvayne, Evergray, Dragonforce....Freaking Portnoy, why did he leave DT?? >:( .... I also got a crochet hook and some thread to experiment in the Christmas vacay. I like doing old lady activities, like sewing and embroidering by hand LOL, so crochet should be right up my alley, I'm sure grandma would be glad to show me how to do it. Crocheting to metal??? Why the fuck not XD I can make something brutal.

Also, an interesting (and some what random) fact. There is a student @ my uni that has long hair and looks like Nathan Explosion. So every time I see him I go "OMG it's Nathan Explosion" imitating the intro
